The only advantage of using Cat6 would be a future increase to 10GigE speeds. Otherwise cat5e and Cat6 both run gigabit speeds with no problems.
The main reason I switch to gigabit in 2001 was for transfer of my HD programs over my network. I would need to transfer 40GB to 70GB every week(of my HD recordings) from my temporary storage to the storage on my network. back then I had to use a PC as instead of any routers. Now with everything so cheap, I use a bunch of gigabit switches and router to handle my devices which have ballooned to over 3 dozen now. I just wish more commercial devices would take advantage of gigabit speeds. Other than my NAS drives, only my PCs and PS3 take can take advantage of it. Everything else is only 100mbs. But I guess if they aren't transferring over the internal network, like VUDU, gigabit speeds aren't needed. Since my max INTERNET download speeds are only 50mbs, so a 100mbs connection can handle those speeds for now.
Although I still hope that FIOS doubles their max INTERNET speeds to 100mbs at some point in the future.

With fiber, there's no real reason they couldn't give you 100GE speeds. The bandwidth is pretty much limitless....

But it still has to be shared with other users. In my area we are on BPON(Broadband Passive Optical Network) which shares 655mbs down/155mbs up with up to 32 people. When I had Comcast, the total bandwidth was so low that every evening my speeds would drop to only 1 or 2 mbs.
FIOS is in the process of upgrading their areas to GPON( Gigabit Passive Optical Network) which will have around 2.4Gbs down/1.2Gbs up shared between 32 to 64 users.

Agreed, but theoretically, optical bandwidths are quite large. So they could put a Gig-E or Sonet link into your home and there would still be enough bandwidth to go around.
